Dyad II – Peat & Port is a 5‑year‑old peated single malt from Waiheke, double distilled and finished in house‑made Petit Verdot port barrels for a rich wine‑influenced depth.
Crafted exclusively for Dramfest 2023 by head distiller Patrick Newton, Dyad II begins with a half‑ton mash of Gladfield peated malt, double distilled in copper pot stills in February 2018. It is aged for four years in American oak, then finished for one year in a Waiheke Island Vintage port barrel made from locally grown Petit Verdot grapes. At 46% ABV, non‑chill filtered and naturally coloured, this expression showcases dark berry fruit, dried dates, orange peel, vanilla and peat smoke on the nose. On the palate, vibrant red fruits, rich caramel and smoke lead into a sweet, subtle oak finish. It earned a Gold Medal and took out the NZ Category at the World Whiskies Awards.
