Departing from traditional molasses-based methods, The NZ Rum Co utilizes sugarcane jaggery to create a cleaner, fresher rum profile. Their 500-litre copper pot and column still, equipped with an infusion basket, allows for versatile distillation and experimentation with various botanicals and yeast strains.
